DIY: Baking Projects!

Can I just say that baking can become some serious therapy for people feeling stressed...and hungry! I love baking and making my own cupcakes and brownies so I thought I'd share some tried and true recipes I found online. Have fun! Xx


Bread Pudding Recipe

Ingredients
6 slices day-old bread
2 tbsp butter, melted
1/2 cup raisins or chocolate chips
4 eggs, beaten
2 cups milk
3/4 cup white sugar
1 tsp ground cinnamon
1 tsp vanilla extract

Directions

  • Preheat oven to 175°C (350°F)
  • Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. Sprinkle raisins or chocolate chips.
  • In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread and lightly push down with a fork until bread is covered and is soaking up the egg mixture.
  • Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

Chocolate Cupcakes

Ingredients (makes 16 cupcakes)
1 1/3 cups all-purpose flour
1/4 tsp  baking soda
2 tsp baking powder
3/4 cup cocoa powder
1/8 tsp salt
3 tbsp butter, softened
1 1/2 cups white sugar
2 eggs
3/4 tsp vanilla extract
1 cup milk

Directions

  • Preheat oven to 175°C (350°F). Line a muffin pan with paper or foil liners. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full.
  • Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Frost with your favorite frosting when cool.
